
I live in a cave.
So, not a real cave exactly…just a home that by all accounts is as just as cool and somewhat lacking in light because of the thundering pine trees that encompass our entire property.Given the sporadic light, growing a vegetable garden can be hugely problematic. Make that almost impossible. Through the years as I try to bargain and rationalize I have come to the conclusion I might be able to strategically carve a sliver of a bed at some point. Until then, I long for the time I can start my own heirloom seeds and enjoy something nurtured and grown from my very own backyard.
I know, I know… whining is never attractive. Not that big of a deal in the grand scheme, and luckily, our amazing local farmers abound. Our WNC bounty is never far from reach.
For the time being, I have my herbs. The few dots of direct sunlight reap its warmth upon my container garden of basil, thyme and mint. To mix it up, I have utilized an antique wash basin just steps outside my kitchen door. It makes an in the moment decision to utilize a clipping or two very convenient. Something we enjoy quite regularly are smoothies with greens and fresh herbs. Basil in particular, as it brings a refreshing twist apart from the usual kale, swiss chard and spinach. Green Sage was kind enough to contribute a fantastic recipe for a Strawberry Basil Smoothie which is perfect this time of year while those strawberries are at their peak.

Strawberry Basil Smoothie- Green Sage Coffeehouse and Cafe
Makes 2 Servings
1 cup unsweetened coconut milk
1 cup fresh or frozen strawberries
1 cup baby spinach
3 fresh basil leaves
1 medium banana, sliced and frozen
Juice of 1/4 lemon or lime
Combine all in blender until processed smooth.
