- 1 clove garlic
- 2 cups frozen green peas, thawed
- 1/2 cup fresh cilantro leaves
- 2 tablespoons well-stirred tahini (sesame seed paste)
- Juice of 1/2 lemon
- 1/2 teaspoon sea salt
- 1/4 teaspoon pepper
- 3 to 4 pita bread rounds
- 2 tablespoons olive oil
With food processor running, drop garlic through food chute of a food processor; process until minced. Add peas, cilantro, tahini, lemon juice, salt, and pepper; cover and process until smooth.
Meanwhile, preheat oven to 350 degrees. Stack bread rounds on a large piece of aluminum foil, brushing tops of bread rounds evenly with olive oil. Wrap in foil; bake until hot, 7 to 8 minutes. Unwrap and cut stack into fourths.
Spoon hummus on plates and serve with warm pita wedges.
