Dinner By The Campfire

There is something special about cooking over an open flame.  With crisp nights ahead, Fall is the time of year to gather the gear and enjoy a fire-pit meal under the stars. The best part? These recipes (something savory and sweet!) are easy to prep and take to a campsite, even if you are roughing it in your own backyard.

 

Foil-Wrapped Chicken and Black Bean Fajitas

Prepare the foil packages up to 6 hours ahead, then take them with you to the campsite or fire pit to cook them.  Makes 6 servings.

 

5 skinless, boneless chicken breast halves

1 package taco seasoning mix 1 (15-ounce)

can black beans, rinsed and drained

1 cup frozen thawed or canned corn kernels

1/2 small red onion, finely slivered

12 to 18 (6-inch) corn or flour tortillas

Toppings: sour cream, shredded cheese, salsa . At home, cut chicken into cubes; toss with taco seasoning mix.  To assemble, tear off 6 (10-inch) sheets of heavy-duty aluminum foil. Place chicken in centers of aluminum foil sheets, dividing evenly.  Top with beans, corn, and onion, dividing evenly.  Wrap up edges of foil sheets around mixtures and seal.  Store in refrigerator up to 4 hours before transporting in cooler.   Wrap 2 stacks of tortillas in pieces of heavy-duty aluminum foil.  Store in refrigerator up to 4 hours before transporting in cooler. To cook, place chicken packets on the coals near the edge of the fire, not in the middle of the flames. Cook, turning every 10 minutes with long metal tongs,, until chicken is cooked, about 25 minutes.  Heat tortilla packages until warmed, about 5 minutes. Roll contents of chicken packages in 2 or 3 tortillas each; add desired toppings.

Cookies: Graham crackers Peanut butter Cookies Molasses cookies Chocolate graham crackers Ginger snaps

Sauces: Caramel sauce Hot fudge sauce, Peanut butter, Nutella

Add-ins: Sliced bananas and strawberries Minced candied ginger Sliced toasted almonds

Chocolate: Dark and milk chocolate candy bars, broken

Other candy bars: Andes Mints, peanut butter cups, Mounds bars, Heath bars

Set up the bar with a big bowl of marshmallows, stacks of cookies, containers of sauces and add-ins, and piles of chocolate bars.   Toast the marshmallows and build your own s’more. See who wins with the most masterful creation!
