Grilled Yellow Squash Roulades

4 large yellow squash 2 to 3 tablespoons extra-virgin olive oil Sea salt and freshly ground pepper, to taste Parsley Mint Pistachio Pesto (recipe follows) Preheat grill for medium-high heat. Trim each squash; cut a very thin lengthwise slice down two “opposing” sides of each squash to make two flat sides. Green Pea Hummus with Warm Pita

With food processor running, drop garlic through food chute of a food processor; process until minced. Add peas, cilantro, tahini, lemon juice, salt, and pepper; cover and process until smooth. Meanwhile, preheat oven to 350 degrees. Stack bread rounds on a large piece of aluminum foil, brushing tops of bread rounds evenly with olive oil. Wrap in foil; bake until hot, 7 to 8 minutes. Unwrap and cut stack into fourths. Spoon hummus on plates and serve with warm pita wedges.
